Getting into ice hockey, can you help me?

I got NHL 08 ( works awesomely great ) and wanted to know which teams are the best in real life.

Also, can you explain me what icing is? I understand many ref calls, but not that one.

And one last thing: I've seen some cutscenes where players start a fight, is this user-controlled or just happens randomly? 'Cause it would rule to make my players beat the sh*t out of opponents (In the cutscenes, my team players get knocked out and then both players are out for 5 min.).

best NHL teams in real life are probably the Detroit Red Wings and the Pittsburgh Penguins. Both are on their way to the Stanley Cup if I'm not mistaken, I'm not at all a hockey fan but I watch a lot of SportsCenter.
